bugs, disease, who knows?

I feel so frustrated. I love working in my garden but I never know if I am doing the right thing. My beans have holes in the leaves. What about those little rolly-polly bugs. Are they harmful and if so how do I get rid of them? I also believe the little white dots on some of my plants are aphids. If is spray them with a bug spray do I do it every time it rains or once a week? I also have a question about petunia's. I have 4 hanging baskets that I water each day and dead head. When I dead head do I just pull off the purple flower or do I also cut the little green cup it grows from? Some of my plants have yellow leaves with brown spots on them. Could that be from water on the leaves, fungus, or just part of the plant life? I never know what to do? I worry about my plants like they are children. I was given a hydragea that I planted and it looks horrible. The leaves are all brown and ugly. They sure don't look like the plant in the pots at the store. I feel like giving up on flowers and vegetables and just planting all bushes. Thanks for any encouragement anyone can give.
