It is possible that the vomiting threw off her electrolytes contributing to the problem.
But the anxiety is normally from elevated lactate or excess epinephrine with a lack of acetylcholine. You are giving her lecithin, which will help with the acetylcholine. For lactate I recommend nettle leaf.
The crying and general nervousness this sounds more like some type of neurotransmitter imbalance. So it is not likely from overmethylation. One thing you can try is glycine, 500mg 3 times daily at least 30 minutes before meals, to help keep her more calm and from emotionally over reacting to situations.
