Hopefully you can understand this ........Euro is a two part sign. First part is a full handed fingerspelled 'C',then the middle and index fingers, (ASL Classifier 'H', as used in the sign for name)drawing an imaginary line from the middle of the 'C' pulling it to the right.(This makes a mirror image or back to front copy of the euro sign in front of you). As for keep the change,sign change... (closed fists roll forwards over each other,regional, or you can use the money sign (palm up,fingers closed onto thumb, tap twice on upward facing palm of non dominant hand). Then sign keep.....Two cupped hands (hand below is palm up,dominant hand is placed on top, with palm facing down, as if holding a small bird in your cupped hands)! Hope this helps.
