Hey there and welcome!

We do allow characters to present as non-binary and have allowed for intersex characters in the past. For the purposes of reproduction, we do prefer to list their biological sex otherwise they would be ineligible to have foals later on. You could, for example, specify a biological sex but still have the character present as non-binary in game.
