there are a couple of official Instant Live CDs out there; and of course, a ####load of unofficial - both professional and amateur recordings on sites like Traders Den & Dimeadozen.
However, I do agree that Buffalo Tom's back catalogue is screaming out for a compilation along the lines of Pavement's "Slow Century" (ie all their videos plus some a couple of live shows).
The videos are out there on youtube, but frankly the quality sucks.
btw - I heard that there was a punkcast of a buffalo tom show, and the recorder was holding out for a soundboard of the audio to matrix with his audio. Haven't heard anything since :(
