In the chess world, we have the Elo rating system. It works very well, and can be used to predict head-to-head outcomes based on the ratings match-ups.
Has spread to other sports also, especially wrt handicapping and analysis.
However, it is based on having an adequate number of contests that are treated as equal in importance. Might be challenging to attempt that for jai-alai. (except for US Spec 7 & 9 games, where it is doable)
But I agree that ideally something - even a panel of experts - should be devised for ranking the players. Replies:
