I made a super simple chicken cacciatore tonight

Just onion, garlic, and San Marzano tomatoes—some more elaborate cacciatore dishes use many more veggies. (Always use high-quality San Marzano tomatoes for Italian dishes.)

This is the genius of Italian cuisines. So many simple, homey dishes you’d never see on a restaurant menu, but completely delicious.

In winter, I really like dishes that cook low and slow and make their own sauce. Very hearty and warming.
