I vote for option B. While I know this will require a bit more time from players when writing battle posts, from the perspective of someone who regularly judges battles I think it is really important that all players in the battle write both an attack and a defense. In single post battles, only the responding player has to write a defense and this can make judging imbalanced. Requiring two posts will be the easiest way to account for that imbalance.
